Grapes grown on volcanic soils using certified organic cultivation methods, with extremely low yields of just 0.6 kilograms per vine. Harvested between late August and mid-September. Spontaneous fermentation in Tuscan amphorae from Florence and partly in oak barrels. The wine remains on the skins for eight days before being gently pressed. It is then aged for six months in amphorae and bottled without filtration.
